Tenderloin with Cider (Solomillo a la sidra).

Amig@s, me han invitado a participar en el calendario internacional de recetas navideñas (International Recipe Advent Calendar 2011) de Lexiophiles, en este calendario se incluyen recetas navideñas en inglés de todo el mundo y yo no he querido ser menos así que me han ayudado a traducir la receta de Solomillo a la Sidra que publíqué la pasada semana y saldrá en su blog el día 6 de diciembre, no dejeis de visitar el blog Lexiophiles y disfrutar de las recetas que día a día se irán publicando. As Christmas is getting closer, I will try to publish some recipes for this special celebration where we all gather together with our family and friends.

I would like to publish simple yet delicious recipes, suitable to all budgets so that everyone is able to find the ingredients without any complication and surprise all your guests. I will also try to also publish some recipes especially for sybarites.

To begin with, today I’ll share with you the Tenderloin with Cider, simple and suitable to any budget, ideal for those who don’t have enough time to cook. Who said you need lots of money to eat properly?

Ingredients

  • 1 Tenderloin
  • 2 Garlic Cloves
  • A bottle of Cider (Suggestion: “Llagar de la Ferrería”  Natural Cider from Asturias)
  • 200 ml. Milk Cream (also known as the skin formed over warm milk)
  • White Pepper
  • Extra-virgin olive oil
  • Mashed Potatoes

Preparation

  1. Clean the tenderloin and completely eliminate the fat. Cut it in 2cm slices.
  2. In a hot pan, add two spoons of olive oil and roast the tenderloin slices. Do not leave them too much time in the pan otherwise they will get dry. Put them in a safe place.
  3. Peel the garlic gloves and cut them into thin sheets.
  4. Using the same pan, add one more olive oil spoon and brown the garlic but do not toast it otherwise it will get bitter. Once they are brown add 20cl of cider and let it reduce for a couple of minutes.
  5. When you notice that cider has reduced to half, add the milk cream, some salt according to your taste and a bit of white pepper.
  6. Season the milk and let it reduce; add the tenderloin slices to temper them before being served.
  7. Serve with mashed potatoes or Duchesse Potatoes.

    • Manolook, alegría me da el volverte ver por aquí. Ojalá fuese todo mio, me han echado un cable en la traducción, el inglés culinario todavía se me resiste un poco, pero voy en camino, jejeje. No nos podremos ver el domingo, ponme la x que falto. Ya hablamos. Un fuerte abrazo!
